A Saint Patrick’s Day classic that’s simple yet so satisfying. Perfect alongside soups, stews, or smothered with butter.


Ingredients:

• 4 cups all-purpose flour

• 1 teaspoon baking soda

• 1 teaspoon salt

• 1 3/4 cups buttermilk

Instructions:

1. Preheat the oven to 425°F (220°C).

2. Sift together the flour, baking soda, and salt in a large bowl.

3. Make a well in the center, pour in the buttermilk, and mix until it forms a soft dough.

4. Turn onto a floured surface, knead lightly, and shape into a round loaf.

5. Place the loaf on a greased baking sheet, cut a cross on top, and bake for 35-40 minutes.

Colcannon (Irish Mashed Potatoes with Greens)

Ingredients:

• 2 lbs potatoes (peeled and quartered)

• 3 green onions (chopped)

Instructions:

1. Boil potatoes in salted water until tender, then drain.

• 2 lbs stewing beef (cubed)

• 1 tablespoon tomato paste

• 2 garlic cloves (minced)

• Salt and pepper to taste

Instructions:

1. Toss the beef cubes in flour, salt, and pepper.

2. Heat oil in a large pot, brown the beef, and set aside.

3. Sauté onions, garlic, and carrots until softened.

4. Stir in tomato paste, stock, and Guinness. Bring to a boil.

5. Add beef back to the pot, cover, and simmer for 2 hours or until the beef is tender.

Ingredients:

• 2 cups vanilla ice cream

• 1 cup milk

• 1/2 teaspoon mint extract

• Green food coloring

Instructions:

1. Blend ice cream, milk, mint extract, and a few drops of food coloring until smooth.

2. Pour into glasses, top with whipped cream and a cherry, and serve immediately.
