Deviled Easter Eggs

Ingredients:

• 6 large eggs, hard-boiled

• 3 tbsp mayonnaise

• 1 tsp Dijon mustard

• 1/4 tsp paprika

• Salt and pepper to taste

Instructions:

1. Cut boiled eggs in half and scoop out the yolks.

2. Mash yolks with mayo, Dijon mustard, paprika, salt, and pepper.

3. Spoon or pipe the mixture back into the egg whites.

4. Garnish with fresh parsley or chives.

Herb-Crusted Rack of Lamb

Ingredients:

• 2 racks of lamb (about 1.5 pounds each)

• 1/4 cup Dijon mustard

• 1/2 cup breadcrumbs

• 2 tbsp olive oil

• 3 cloves garlic, minced

• 2 tbsp fresh rosemary, chopped

• Salt and pepper

Instructions:

1. Preheat oven to 400°F (200°C). Season lamb with salt and pepper.

2. Spread Dijon mustard over the racks.

3. Combine breadcrumbs, olive oil, garlic, and rosemary; press mixture onto the lamb.

4. Roast for 20-25 minutes for medium-rare. Rest for 10 minutes before slicing.

Spring Pea and Mint Crostini

Ingredients:

• 1 baguette, sliced and toasted

• 1 cup fresh or frozen peas

• 2 tbsp olive oil

• 1 tbsp lemon juice

• 1 tbsp fresh mint, chopped

• Salt and pepper to taste

Instructions:

1. Blend peas, olive oil, lemon juice, mint, salt, and pepper until smooth.

2. Spread the mixture onto toasted baguette slices.

3. Top with a sprinkle of mint and cracked black pepper.

Honey-Glazed Ham

Ingredients:

• 1 spiral-cut ham (8–10 pounds)

• 1/2 cup honey

• 1/4 cup Dijon mustard

• 1/4 cup brown sugar

• 1/4 tsp ground cloves

Instructions:

1. Preheat oven to 325°F (165°C). Place ham in a roasting pan and cover with foil.

2. Mix honey, mustard, brown sugar, and cloves to make the glaze.

3. Brush glaze over the ham and bake for 1.5–2 hours, basting every 20 minutes.

Scalloped Potatoes

Ingredients:

• 3 lbs Yukon gold potatoes, thinly sliced

• 2 cups heavy cream

•1 cup shredded cheddar cheese

•4 tbsp butter

•2 cloves garlic, minced

Instructions:

1. Preheat oven to 375°F (190°C). Grease a baking dish.

2. Layer potato slices in the dish and sprinkle garlic in between layers.

3. Pour cream over potatoes, top with butter and cheese.

4. Bake for 50–60 minutes until golden brown and tender.

Classic Carrot Cake

Ingredients:

•2 cups all-purpose flour

•2 cups grated carrots

•1.5 cups sugar

•3/4 cup vegetable oil

•3 large eggs

•1 tsp cinnamon

•1 tsp baking powder

•Cream cheese frosting (store-bought or homemade)

Instructions:

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

2. Mix flour, sugar, cinnamon, and baking powder in a bowl.

3. Add oil, eggs, and carrots, stirring until just combined.

4. Divide batter between pans and bake for 25–30 minutes. Cool before frosting.

Roasted Spring Vegetables

Ingredients:

•1 lb baby carrots

•1 lb asparagus

•1 lb baby potatoes, halved

•3 tbsp olive oil

•2 tsp garlic powder

•Salt and pepper

Instructions:

1. Toss vegetables with olive oil, garlic powder, salt, and pepper.

2. Roast at 400°F (200°C) for 25–30 minutes or until tender.

Mini Lemon Tarts

Ingredients:

• 12 premade tart shells

•1/2 cup lemon curd

•1 cup heavy whipping cream

•1 tbsp powdered sugar

Instructions:

1. Whip cream and powdered sugar until stiff peaks form.

2. Spoon lemon curd into tart shells and top with whipped cream.

3. Chill for an hour before serving.
